Spiced Mango Chicken Curry


A delightful blend of sweet, tangy, and spicy flavors, this Spiced Mango Chicken Curry is a unique twist on traditional curry recipes. Perfect for adventurous eaters, it combines the sweetness of mango with aromatic spices to create a mouthwatering dish.

Ingredients:
  • 500g boneless chicken thighs, cut into cubes
  • 1 large ripe mango, peeled and pureed
  • 1 medium onion, finely chopped
  • 2 garlic cloves, minced
  • 1-inch ginger, grated
  • 1 cup coconut milk
  • 1 tsp turmeric powder
  • 1 tsp cumin powder
  • 1 tsp coriander powder
  • 1/2 tsp red chili powder (adjust to taste)
  • 2 tbsp olive oil
  • Salt to taste
  • Fresh coriander leaves for garnish
Instructions:
Marinate the Chicken:
  • In a bowl, mix the chicken cubes with turmeric powder, cumin powder, coriander powder, and a pinch of salt.
  • Let it marinate for 30 minutes.
Prepare the Base:
  • Heat olive oil in a pan over medium heat.
  • Add the chopped onion and cook until golden brown.
  • Add garlic and ginger, sauté for another minute until fragrant.
Cook the Chicken:
  • Add the marinated chicken to the pan and cook until it turns golden on all sides.
  • Pour in the coconut milk and let it simmer for 15 minutes.
Add the Mango Puree:
  • Stir in the mango puree and red chili powder.
  • Cook for another 10 minutes, allowing the flavors to meld together.
Serve:
  • Garnish with fresh coriander leaves.
  • Serve hot with steamed rice or naan.
