Spiced Mango Chicken Curry
A delightful blend of sweet, tangy, and spicy flavors, this Spiced Mango Chicken Curry is a unique twist on traditional curry recipes. Perfect for adventurous eaters, it combines the sweetness of mango with aromatic spices to create a mouthwatering dish.
Ingredients:
- 500g boneless chicken thighs, cut into cubes
- 1 large ripe mango, peeled and pureed
- 1 medium onion, finely chopped
- 2 garlic cloves, minced
- 1-inch ginger, grated
- 1 cup coconut milk
- 1 tsp turmeric powder
- 1 tsp cumin powder
- 1 tsp coriander powder
- 1/2 tsp red chili powder (adjust to taste)
- 2 tbsp olive oil
- Salt to taste
- Fresh coriander leaves for garnish
Instructions:
Marinate the Chicken:
- In a bowl, mix the chicken cubes with turmeric powder, cumin powder, coriander powder, and a pinch of salt.
- Let it marinate for 30 minutes.
Prepare the Base:
- Heat olive oil in a pan over medium heat.
- Add the chopped onion and cook until golden brown.
- Add garlic and ginger, sauté for another minute until fragrant.
Cook the Chicken:
- Add the marinated chicken to the pan and cook until it turns golden on all sides.
- Pour in the coconut milk and let it simmer for 15 minutes.
Add the Mango Puree:
- Stir in the mango puree and red chili powder.
- Cook for another 10 minutes, allowing the flavors to meld together.
Serve:
- Garnish with fresh coriander leaves.
- Serve hot with steamed rice or naan.
