Chicken Loaded Fries – Indian Style

Introduction

Ingredients

For the Fries:

  • 4 large potatoes (peeled and cut into thin strips)
  • 2 tbsp cornstarch
  • 1 tsp salt

  • 300g boneless chicken (cut into small cubes)
  • 1 tbsp ginger-garlic paste
  • 1 tsp red chili powder
  • ½ tsp turmeric powder
  • 1 tsp garam masala
  • 1 tsp cumin powder
  • 1 tbsp yogurt
  • 1 tbsp oil
  • Salt to taste

For the Sauce:

  • ½ cup mayonnaise
  • 2 tbsp tomato ketchup
  • 1 tsp red chili sauce
  • 1 tsp garlic powder
  • ½ tsp black pepper powder

Additional Toppings:

  • 1 cup shredded mozzarella cheese
  • 2 tbsp chopped fresh coriander leaves
  • 1 small onion (thinly sliced)
  • 1 small tomato (deseeded and diced)
  • 1 small green chili (finely chopped, optional)

Step-by-Step Instructions

1. Preparing the Fries:

1.     Peel the potatoes and cut them into thin strips. Try to keep the size consistent for even cooking.

2.     Soak the potato strips in cold water for 20-30 minutes to remove excess starch. This helps achieve crispy fries.

3.     Drain the water and pat the potatoes dry with a clean kitchen towel.

4.     Toss the potato strips with cornstarch and salt to coat them evenly.

5.     Heat oil in a deep-frying pan over medium heat. Fry the potato strips in small batches until they are golden and crispy. Remove them using a slotted spoon and place them on a paper towel to absorb excess oil.

2. Cooking the Chicken Topping:

1.     In a mixing bowl, marinate the chicken cubes with ginger-garlic paste, red chili powder, turmeric powder, garam masala, cumin powder, yogurt, and salt. Let it rest for 15-20 minutes.

2.     Heat 1 tablespoon of oil in a non-stick pan over medium heat. Add the marinated chicken and cook for 8-10 minutes or until the chicken is fully cooked and slightly browned. Stir occasionally to ensure even cooking.

3.     Remove the chicken from the heat and set it aside.

1.     In a small bowl, mix mayonnaise, tomato ketchup, red chili sauce, garlic powder, and black pepper powder until smooth. Adjust the seasoning according to your taste.

1.     Preheat your oven to 180°C (350°F).

2.     Take an oven-safe dish or a serving platter and spread the fried potato strips evenly.

3.     Sprinkle shredded mozzarella cheese over the fries.

4.     Spread the cooked chicken pieces evenly over the cheese layer.

5.     Add a generous drizzle of the prepared sauce.

6.     Top with sliced onions, diced tomatoes, chopped green chili (if using), and fresh coriander leaves.

1.     Place the dish in the preheated oven for 5-7 minutes or until the cheese melts completely.

2.     Remove from the oven and serve hot.
